Apple and Blackberry fluff

Ingredients:

2 Sponge fingers
1 pkt Blackcurrant Sugar free jelly
4 Granny Smiths apples Cinnamon to taste (optional)
10 oz virtually fat free fromage frais
Sweetener
Vanilla
Essence Berries and Mint to decorate

Method
  • Stew the apples to a puree with the cinnamon
  • Slice sponge fingers and line base of dish Make jelly with half water.
  • Once set whisk in 7 oz fromage frais.
  • Pour over sponge
  • When jelly mixture has set spread the apple puree on top
  • Whisk sweetener and vanilla essence into remaining fromage frais and pour over the apple
  • Decorate with berries and mint
Serves 4
Fruit and flavour of jelly can be varied to suit.
