Ingredients:
450g (1lb) Potatoes, peeled and cut into chunks
1 large Spanish onion, sliced
150g (5oz) trimmed and halved green beans
400g (14oz) can of chickpeas, drained and rinsed
400g (14oz) can of chopped tomatoes
1 large pear, peeled and sliced
150ml (1/4pt) vegetable stock
2 x 15ml (2tblspn) Olive Oil
3 cloves Garlic, crushed
2 x 15ml (2 tspn) paprika
1 x 5ml (1 tspn) cumin
1 x 5ml (1 tspn) turmeric
salt & freshly ground pepper to season
Method- Heat oil in a large pan, adding the onions and garlic, then fry until onion is golden brown
- Add potatoes and spices and cook for one minute
Add remainder of ingredients and season to taste.
- Cover and simmer for 30-35 minutes,
stirring occasionally until potatoes are cooked.
Serve immediately
