Moussaka

Ingredients:

1 lb Lean Minced Beef
2 Medium Onions (chopped)
2 Medium Aubergines (sliced)
1 Large can chopped tomatoes
Salt & Pepper
2 tablespoons chopped parsley


Topping

½ well cooked cauliflower
4 oz Cottage Cheese
3 tablespoons water
Pinch Mustard Powder
Salt & Pepper

Method
  • Preheat the oven to 375 F / 180 C / Gas 5
  • Brown mince, add onions and cook until onions are transparent
  • Add parsley and salt and pepper
  • Brown aubergines (non-stick pan - no added fat)
  • Blend all ingredients for topping until smooth
  • Spread mixture over base of oven-proof dish
  • Layer aubergine slices
  • Add tomatoes
  • Spoon on topping
  • Bake for 1 hour covered
  • Remove covering and bake for further ½ hour
