Ingredients:
1 lb Lean Minced Beef
2 Medium Onions (chopped)
2 Medium Aubergines (sliced)
1 Large can chopped tomatoes
Salt & Pepper
2 tablespoons chopped parsley
Topping
½ well cooked cauliflower
4 oz Cottage Cheese
3 tablespoons water
Pinch Mustard Powder
Salt & Pepper
Method- Preheat the oven to 375 F / 180 C / Gas 5
- Brown mince, add onions and cook until onions are transparent
- Add parsley and salt and pepper
- Brown aubergines (non-stick pan - no added fat)

Blend all ingredients for topping until smooth

Spread mixture over base of oven-proof dish
- Layer aubergine slices
- Add tomatoes
- Spoon on topping
- Bake for 1 hour covered
- Remove covering and bake for further ½ hour
