Ingredients:
200g (7oz) Fresh pasta - Tagliatelli
1 med onion (finely chopped)
500ml (17fl oz) stock, chicken or vegetable
4 rashers rindless back bacon, trimmed & chopped
75g (3oz) low-fat cheddar cheese
25g (1oz) Parmesan (freshly grated)
1 egg yolk
4 tbsp low-fat crème fraiche
pinch of mustard powder
Seasoning & chopped chives to garnish
Method- In a pan gently sweat the onions in a little of the stock until soft.
- Add the bacon, cover the pan
and cook for 2 minutes.
- Add remaining stock and reduce until it becomes syrupy.
- Stir in the cheeses, egg yolk, crème fraiche and mustard powder.
- In a separate pan bring 2pints of water to the boil, add pasta and cook for 2-3 minutes.
- Drain,
add pasta to sauce and season.
- Serve garnished with chopped chives and sprinkle with black
pepper.
Serves 2 - 3 people Calories = 344 per serving.
