Quorn lasagne

Ingredients:

1 Onion chopped
2 garlic cloves crushed (optional)
1 lb minced Quorn
Mixed herbs to taste
Seasoning
Can of chopped tomatoes
¼ pint stock (can use Knorr stock cube)
1 can ready made Macaroni Cheese
9-12 sheets of Lasagne
1 oz grated cheese for top (optional)

Method
  • Dry fry onion and garlic until soft
  • Add Quorn and fry until lightly browned, stirring all the time
  • Stir in mixed herbs, chopped tomatoes, stock and seasoning
  • Simmer for 20-30 minutes until most of the liquid has been absorbed
  • Liquidise Macaroni Cheese
  • Spread 1/3 of cheese sauce in base of deep ovenproof dish
  • Arrange 3-4 sheets of Lasagne over the sauce
  • Top with half the Quorn
  • Repeat layers once more
  • Finish with lasagne sheets and remaining cheese sauce
  • Sprinkle grated cheese over top and bake in the oven at 190C / 375F / Gas 5 for 35-40 minutes until golden brown
