Ingredients:
1 Aubergine - sliced
1 small onion - sliced into rings
2 oz mushrooms
1 tomato
8 oz very low-fat cottage cheese
3 eggs
Salt & Pepper
Mixed herbs
Method- Wipe aubergine, slice, place in a colander, sprinkle with salt and leave to stand for about ½ hour.
- Place slices of aubergine, onions, mushrooms and tomato in an ovenproof dish
Beat eggs and very low-fat cottage cheese, season if desired and pour this mix over the vegetables
-
Sprinkle with mixed herbs
- Bake in the oven for approx 30 mins on Gas 6 or 190C or until set and lightly browned
Serve with salad or vegetable - can be eaten hot or cold |
